Pink Champagne Cupcakes!

In honor of Valentine's Day, I decided to try out some Pink Champagne cupcakes.  They are topped with Cream Cheese Frosting...with just a "kiss" of pink coloring, sugar crystals for sparkle and sugar pearls for "bubbles".  I first had Pink Champagne Cake when my sister had one for me at my baby shower.  It was DELICIOUS!  Well, I have to say, these cupcakes were very good but not quite as moist as my baby shower cake.  Now my mission is to figure out why....!  :)

I topped some of them with strawberries.  Afterall, what goes better with champagne, than strawberries!??!
